Vegan Pecan Pie Brownies

Ingredients:

FOR THE BROWNIE LAYER:

1 cup all-purpose flour

1/2 cup cocoa powder

1/2 teaspoon baking powder

1/4 teaspoon salt

1 cup granulated sugar or coconut sugar

1/2 cup melted coconut oil or vegetable oil

1/2 cup unsweetened applesauce

1 teaspoon vanilla extract

FOR THE PECAN PIE TOPPING:

1 cup chopped pecans

1/3 cup maple syrup or agave nectar

1/3 cup coconut sugar or brown sugar

1/4 cup coconut oil, melted

1 teaspoon vanilla extract

A pinch of salt

FOR THE BROWNIE LAYER:

Preheat Oven:

Preheat your oven to 350°F (175°C). Grease or line a square baking pan.

Mix Dry Ingredients:

In a bowl, whisk together flour, cocoa powder, baking powder, and salt.

Combine Wet Ingredients:

In another bowl, mix together sugar, melted coconut oil, applesauce, and vanilla extract.

Combine Wet and Dry Ingredients:

Add the wet ingredients to the dry ingredients and mix until just combined.

Bake:

Pour the brownie batter into the prepared pan and spread it evenly. Bake in the preheated oven for 15-20 minutes or until a toothpick inserted into the center comes out with a few moist crumbs (don’t overbake).

FOR THE PECAN PIE TOPPING:

Prepare Pecan Mixture:

In a bowl, combine chopped pecans, maple syrup or agave nectar, coconut sugar or brown sugar, melted coconut oil, vanilla extract, and a pinch of salt. Mix well.

Add Topping:

After the brownie layer has baked, spread the pecan mixture evenly over the top.

Bake Again:

Return the pan to the oven and bake for an additional 15-20 minutes or until the pecan topping is set.

Cool and Slice:

Allow the brownies to cool completely in the pan before slicing into squares.
