Savory Zucchini & Ham Cake
Ingredients
- 3 eggs
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp sugar (optional, balances flavor)
- 100 ml vegetable oil
- 200 g plain yogurt (or milk)
- 300 g all-purpose flour
- 1 tbsp baking powder
- 1 medium zucchini, diced
- 150 g ham, diced
- 120 g cheese (mozzarella, gouda, or emmental), cubed or grated
- 1–2 tbsp chopped parsley or green onions (optional)
Instructions
- Preheat oven to 180°C (350°F). Grease a round pan (22–24 cm).
- In a bowl, whisk eggs, salt, pepper, and sugar until light.
- Add oil and yogurt, mix well.
- Sift in flour + baking powder, stir just until smooth.
- Fold in zucchini, ham, cheese, and herbs.
- Pour batter into pan and smooth the top.
- Bake 40–45 minutes until golden and a toothpick comes out clean.
- Cool 10 minutes, slice, and enjoy
